A new series spread over six episodes, where Stevie Parle and Emma Grazette – two intrepid chefs taste black pepper in Cambodia, chillies in Mexico, cinnamon in India, cloves in Zanzibar, cumin in Turkey and nutmeg and mace in Grenada.
Stevie Parle is an amazing London chef and heads up the Dock Kitchen. He trained at the River Cafe and his first book was My Kitchen: Real Food from Near and Far (New Voices in Food) followed by Stevie Parle’s Dock Kitchen Cookbook: Real Home Cooking from Around the World.
Stevie was named Young Chef Of The Year by the Observer Food Monthly Magazine in October 2010 and now writes a weekly food column for the Saturday Telegraph Weekend.
Stevie is accompanied by chef and professional spice blender Emma Grazette who became development chef at The Spicery in Bath, supplying spices and blends to some of Britain’s top restaurants that includes The Fat Duck, Moro and Ottolenghi.
They are embarking on a vibrant, colourful and spice-filled journey around the world.
We all know that adding herbs to a dish can transform meals. Just so adding spice is the easiest and quickest way to transform a simple dish from mundane to sensational.

Stevie and Emma head to Oaxaca, Mexico, where chillies go back thousands of years and every local is an aficionado. See the amazing variety and lineage of chillies available.
They visit the Abastos market and view the 150 different varieties available. See chipotle and habanero chillies. Their journey takes them to meet chilli farmers who play music to their crops, a Zapotec cook with a recipe handed down from 500BC and a guardian of the nation’s best kept culinary secret, mole negro.

On to Zanzibar to rediscover the magic of cloves. Many years in the past, cloves were one of the most expensive commodities on the planet.
In this episode we see how Portuguese, Omanis, British and Indians were all involved in the spice trade and each nation’s influence on the architecture and food in Zanzibar.
