Rick Stein From Venice to Istanbul published 30 Jul 2015

Rick Stein launched his new cookbook in July and the TV series has begun on BBC2.

A new series from the wonderful cuisine of Yotam Ottolenghi visiting Corsica, Mallorca, Crete and Sardinia.

The new series will consist of four one hour episodes and Yotam is travelling around the beautiful Mediterranean islands of Sardinia, Corsica, Mallorca and Crete where he cooks up his own take on mouth-watering local dishes.

And as many will know and understand it is essential that we study the history and island people to get a grasp of how the very speacil and localised cuisine has developed.

So Yotam explores how invasions and trading from East and West through the years has been the reason for the varieties of unique food served on the islands today.

Corsica 1/4 : Chef Yotam Ottolenghi continues his culinary journey as he visits four of the Mediterranean’s most beautiful islands, including Sardinia, Majorca and Crete. He begins on the French island of Corsica, where he discovers how its lush green landscape flavours the food, from cheese to honey, and meets its most celebrated chefs. He also prepares recipes including roasted fish with aromatic Corsican olive oil, Swiss chard and herb tart with local cheeses, honey and apricot trifle with walnuts and lavender, chestnut cake and a rich veal stew.

Majorca 2/4 : Chef Yotam Ottolenghi travels to Majorca, the largest of Spain’s Balearic Islands. He leaves the busy beaches behind as he heads inland in search of local cuisine and discovers a larder of local ingredients including roast suckling pig, tomatoes sweetened on the vine and oranges. He prepares a feast of Spanish and Moorish origin, featuring salt-crusted fish with fennel, a sweet and salty salad of caramelised oranges with goat’s cheese and a dessert of apricots, almonds and raisins. He also discovers ruby red prawns in the coastal town of Soller, which become the key ingredient in his deconstructed paella.

The TV series Gino’s Italian Escape, is broadcast 13 September at 8 pm on ITV where Olive trees, cherry picking and the remarkable Italian scenery all add up to a visual treat.

In the cookbook Gino captures the flavours, smells and tastes of his homeland in over 100 deliciously simple recipes. We see Pizza, pasta and antipasti dishes, Gino’s classics with a twist such as Honey & Rosemary Lamb Cutlets and Limoncello Mousse.

Gino was born in Torre del Greco, Naples, in southern Italy, and has inherited his grandfather’s love of cooking. He studied at the Luigi de Medici Catering College.

We all know Gino from TV, most particularly the spicy show with Melanie Sykes in Let’s Do Lunch with Gino and Mel, and as a resident chef on ITV’s This Morning.

Rick Stein’s India In search of the perfect curry – new cookbook recipes and video player links

Rick Stein’s India is the new excellent text on curries, written as only Rick can.

Rick Stein sums up all that is special and sumptuous about curries and the Indian recipes he has encountered on his Indian curry Odyssey in this new and beautifully produced curry guide and cookbook. A journey through this exciting and colourful country, it is a sensual and stimulating experience.

We all love a good Curry – some just with onion and chicken, others with creamy sauce and crispy duck…. The variety of possibilities are almost endless  but Rick has – in his unique style – made sense of the complex world that is the Indian Curry.
So what is a good curry? Is it the aroma, the look, or the combination of all these with an expectation of a satisfying meal, that helps us forget about our problems and lifts us to a higher level.

To quote Rick :
‘Whenever I hear the word curry, I’m filled with a longing for spicy hot food with the fragrance of cumin, cloves and cinnamon. I see deep red colours from lots of Kashmiri chilli’s, tinged with a suggestion of yellow from turmeric. I think of the tandoor oven and slightly scorched naan shining with ghee and garlic. A bowl of dark dal, a green chutney of coriander and mint and a plate with a few sliced tomatoes, cucumbers and sliced onions. When Indians talk of food, they talk about their life. To understand this country you need to understand curry.’

In this adventure Rick discovers 120 recipes by visiting home cooks, street vendors and having had what must have been the experience of a lifetime.

Readers of this book if based in the UK or Ireland will have a concept of curry based on visits to various take away food houses. Perhaps Indian, Thai or Chinese. The first thing Rick helps us with is to see curry from the perspective of the Indian people.

It is not the same as we understand it, a curry is something that can refer to almost any food from the Indian subcontinent.

In this the second series of the cookery show presented by the Fabulous Baker Brothers, Tom and Henry Herbert.

Butcher and chef Henry Herbert and his brother Tom, who runs a bakery next to his sibling’s shop in Gloucestershire. In this series, the Fabulous Baker Brothers, Tom and Henry Herbert try their hand at designing local dishes for cafés, bakeries and restaurants across the UK.

Episode One: Blackpool and the Mermaid Café – Tuesday 19/2/2013

Tom and Henry, a baker and a butcher from the West Country lads, baker and butcher via their Morris Minor van travel the UK to assist struggling businesses.

The boys begin the adventure in Blackpool at the Mermaid Café where the owners Len and Babs are feeling the pinch in the current economic downturn.  The boys attempt to modernise the menu and create a new item for the menu by putting three dishes to the public for a taste test.

Episode Two: The Tower of London – Tuesday 26/2/2013

In the second episode of series two, Tom and Henry Herbert help the owners of the Kitchen @ Tower, a café-restaurant near the Tower of London, as they struggle to keep up with other local businesses. This sees the brothers develop three dishes to the public for a taste test in order to select one for the menu at Kitchen  @ Tower.

In  the third episode Tom and Henry Herbert are in Exmouth, Devon, to help the owners of the Beacon Vaults café, create a new signature dish using locally-inspired flavours.

The boys are in Stratford-upon-Avon at Haslam’s Deli Café:


  • slow-roasted pulled pork wrapped in crispy filo pastry, called Shakespeare’s codpiece
  • a beef sandwich – a pan-fried spelt bread sandwich of marinated beef brisket, served with onion marmalade and local cheese
  • Juliet’s fool – a decadent raspberry and chocolate cream fool and a sugary biscuit

The Deli Café wishes to increase the number of customers and Henry and Tom seek to help and allow the public to have their vote.

A new series spread over six episodes, where Stevie Parle and Emma Grazette – two intrepid chefs taste black pepper in Cambodia, chillies in Mexico, cinnamon in India, cloves in Zanzibar, cumin in Turkey and nutmeg and mace in Grenada.

Stevie Parle is an amazing London chef and heads up the Dock Kitchen. He trained at the River Cafe and his first book was My Kitchen: Real Food from Near and Far (New Voices in Food) followed by Stevie Parle’s Dock Kitchen Cookbook: Real Home Cooking from Around the World.

Stevie was named Young Chef Of The Year by the Observer Food Monthly Magazine in October 2010 and now writes a weekly food column for the Saturday Telegraph Weekend.

Stevie is accompanied by chef and professional spice blender Emma Grazette who became development chef at The Spicery in Bath, supplying spices and blends to some of Britain’s top restaurants that includes The Fat Duck, Moro and Ottolenghi.

They are embarking on a vibrant, colourful and spice-filled journey around the world.

We all know that adding herbs to a dish can transform meals.  Just so adding spice is the easiest and quickest way to transform a simple dish from mundane to sensational.
