Rick Stein’s India In search of the perfect curry – new cookbook recipes and video player links

Rick Stein’s India is the new excellent text on curries, written as only Rick can.
Subtitled – In Search of the perfect curry – Recipes from my Indian Odyssey.

Rick Stein sums up all that is special and sumptuous about curries and the Indian recipes he has encountered on his Indian curry Odyssey in this new and beautifully produced curry guide and cookbook. A journey through this exciting and colourful country, it is a sensual and stimulating experience.

We all love a good Curry – some just with onion and chicken, others with creamy sauce and crispy duck…. The variety of possibilities are almost endless  but Rick has – in his unique style – made sense of the complex world that is the Indian Curry.
So what is a good curry? Is it the aroma, the look, or the combination of all these with an expectation of a satisfying meal, that helps us forget about our problems and lifts us to a higher level.

To quote Rick :
‘Whenever I hear the word curry, I’m filled with a longing for spicy hot food with the fragrance of cumin, cloves and cinnamon. I see deep red colours from lots of Kashmiri chilli’s, tinged with a suggestion of yellow from turmeric. I think of the tandoor oven and slightly scorched naan shining with ghee and garlic. A bowl of dark dal, a green chutney of coriander and mint and a plate with a few sliced tomatoes, cucumbers and sliced onions. When Indians talk of food, they talk about their life. To understand this country you need to understand curry.’

In this adventure Rick discovers 120 recipes by visiting home cooks, street vendors and having had what must have been the experience of a lifetime.

Readers of this book if based in the UK or Ireland will have a concept of curry based on visits to various take away food houses. Perhaps Indian, Thai or Chinese. The first thing Rick helps us with is to see curry from the perspective of the Indian people.

It is not the same as we understand it, a curry is something that can refer to almost any food from the Indian subcontinent.

Episode 1 Kolkata and Chennai

Rick Stein begin his search for the perfect curry.

As we all love a curry and there are so many varieties, Rick Stein sets us off on a road of adventure. Just the thought of a curry … ahhhhh….

So Indian street flood and different communities and those curries.

We start in Kolkata and find a British guide who takes Rick and us, on a visit to a number of street stalls, also a restaurant at the All Bengal Women’s Union which is a charity.

We search the curries of Bengal and Tamil Nadu, see the use of mustard and tamarind in fish dishes.

Who is Katie Davies?

A good question. Have you heard of the blog, “What Katie Ate”? Katie Davies started out as a graphic designer, who developed (sorry) an interest in food photography. It was soon after this that the blog ‘What Katie Ate’ was born.

Though Katie was born in Dublin, Ireland she is a lucky lady being now based in Sydney, Australia!

This nicely produced book, has the unusual typeface of a typewriter – old style, however the images are wonderful and the food is enticing. The images could so with being printed glossy in my opinion – still a visual treat.

Canapes and drinks give us beef and pork sliders, apple ginger and cranberry vodka cocktails, crab cakes and pink mayonnaise… ahh!…..

Wonderful and captivating images throughout the text. The format of the book follows the key times when the Thai people flock onto the streets to eat their food. So we find the text divided into the three main meal times of Morning, Noon and Night.

1/4. Yotam’s journey starts in Morocco’s most vibrant city, Marrakech, where he discovers the secrets of the tagine and explores the delicious street food and dines at Jemaa El Fna square. Then he returns to his rooftop kitchen to create barbecued leg of lamb with almonds and an orange blossom sauce.

2/4. Chef Yotam Ottolenghi’s culinary journey next port of call is the amazing and vibrant Istanbul. Common practice is to fish from the Galata bridge – so Yotam tastes fish from the waters of the Bosphorus, shops for vegetables and samples street food.

The recipes he is inspired to create include: Turkish pizza topped with spicy beef, pine nuts and a crunchy salad baked in a traditional stone oven, and a casserole bursting with prawns, squid, tomatoes and cheese.

Yotam’s latest book with Sami Tamimi – is called Jerusalem and explores the food of the city of Jerusalem. Yotam and Sami’s food is based on a shared home city of Jerusalem. Both were born there in the same year, Sami on the Arab east side and Yotam in the Jewish west. Nearly 30 years later they met in London, and discovered they shared a language, a history, and a love of great food.

 Series 1 Episode 3 Tunisia   Repeats 10 March 2013 at 7.00pm Ch4

3/4. A visit to the enigmatic and amazing Tunisia, which is one of North Africa’s most popular holiday destinations. Our intrepid chef, Yotam seeks out fish, eats foods that include the local fiery harissa paste, and tastes spicy merguez sausages.

So what about a hermit who runs a restaurant? We see the idyllic scene as Yotam visits this unusual out door restaurant with a view.

  • a seafood pasta dish using fresh mussels, squid and luscious prawns,

Back to his home,Yotam visits Israel. First stop is Tel Aviv, where seafood, hummus and shakshuka are explored.

Shakshka is where eggs are gently poached in a spicy sauce of tomatoes, onion and hot chili peppers. Wow!

Tel Aviv is a bright and busy city with a superb coastal location, Yotam visits the  morning fish market and then serves up grilled fish-cakes with a creamy beetroot and horseradish relish.

Pomegranates, olives are amongst Israel’s abundant fruit and vegetables, full of health and life giving nutrients. Yotam journeys to a farm to pick pomegranate and makes a tomato and pomegranate salad with pomegranate molasses and a fragrant garlic dressing.

Yotam goes back to basics to forage for ingredients in the hills of Jerusalem then returns to Tel Aviv to cook apple and sage pancakes and prepare an Israeli-style pizza made with Jerusalem cheese, herbs and fresh tomatoes.
