Levi Roots – Grill with Levi

Levi presents Grill with Levi – 101 Reggae Recipes for Sunshine and Soul a 208 page cookbook published May 2013.

Well known entrepreneur, musician and cook. Levi was a brave man and he appeared on BBC Two’s Dragon’s Den to present a Reggae Reggae Sauce.

The clever Levi managed to convince two of the five judges to offer £25,000 each to promote and manufacture the Reggae Reggae Sauce brand. The sauce is now stocked in all major supermarkets in the UK and and extended to a range of new flavours and products.

Levi also creates delicious West Indian recipes in the kitchen of his new South London eatery, Papine Jerk Centre.

He still loves making music and has a album released soon.

Levi’s first cookbook, Levi Roots’ Reggae Reggae Cookbook was published last year and he currently lives and works in South London.

A new series from the wonderful cuisine of Yotam Ottolenghi visiting Corsica, Mallorca, Crete and Sardinia.

The new series will consist of four one hour episodes and Yotam is travelling around the beautiful Mediterranean islands of Sardinia, Corsica, Mallorca and Crete where he cooks up his own take on mouth-watering local dishes.

And as many will know and understand it is essential that we study the history and island people to get a grasp of how the very speacil and localised cuisine has developed.

So Yotam explores how invasions and trading from East and West through the years has been the reason for the varieties of unique food served on the islands today.

Corsica 1/4 : Chef Yotam Ottolenghi continues his culinary journey as he visits four of the Mediterranean’s most beautiful islands, including Sardinia, Majorca and Crete. He begins on the French island of Corsica, where he discovers how its lush green landscape flavours the food, from cheese to honey, and meets its most celebrated chefs. He also prepares recipes including roasted fish with aromatic Corsican olive oil, Swiss chard and herb tart with local cheeses, honey and apricot trifle with walnuts and lavender, chestnut cake and a rich veal stew.

Majorca 2/4 : Chef Yotam Ottolenghi travels to Majorca, the largest of Spain’s Balearic Islands. He leaves the busy beaches behind as he heads inland in search of local cuisine and discovers a larder of local ingredients including roast suckling pig, tomatoes sweetened on the vine and oranges. He prepares a feast of Spanish and Moorish origin, featuring salt-crusted fish with fennel, a sweet and salty salad of caramelised oranges with goat’s cheese and a dessert of apricots, almonds and raisins. He also discovers ruby red prawns in the coastal town of Soller, which become the key ingredient in his deconstructed paella.

Jamie begins with his take on why he decided to develop the key concept – saving or to be more accurate – being intelligent when it comes to food and cooking. He says that it was the public who asked for this book and in times of austerity I suppose it is very much the desire of all of us to be careful with what we spend. So a sensible approach to the state of things, careful use of our money, time etc.

The subtitle says it all: Shop smart, cook clever, waste less – the main consideration is knowing how to cook and being able to plan ahead. Both come with practise and it is Jamie’s enthusiasm that will encourage us all and also his great ability to help us achieve in a short time  – what it has taken years for Jamie and others to learn.

Hence the cookbook, suitable for all couples, families, single folks and students. I would suggest that students will find this book to be a must have!

In the first episode ‘a dover sole with lime and ginger is cooked – then a traditional fish and chips with a spicy marinade for cod fillets. Slow-cooking pulled pork with cinnamon and cloves, and cinnamon and chilli powderwith vanilla ice cream.’

Series 1 – 2. South Wales   Mon 26 Aug 2013 at 20:30 pm

2/5 Tony and Cyrus cook with goats’ cheese in Carmarthenshire and visit a Bridgend sweet shop.

In the second episode ‘beginning in the Cothi Valley in Carmarthenshire, Tony bakes a goat’s cheese, red onion and caraway seed tart served with pickled onions flavoured with chilli flakes, lime juice and pomegranate molasses. A family-run toffee business in Bridgend is visited where they put some whole aniseeds into a pan of bonfire toffee.’

Series 1 – 3. Edinburgh   Monday, 2 September at 20:30 pm

3/5 Tonight the intrepid pair visit Tony’s home of Edinburgh and he makes the traditional Scottish dessert cranachan, but with a twist.

The third episode sees Tony Singh taking Cyrus Todiwala to his home town of Edinburgh, where we see him working the spice men magic with traditional Scottish dessert cranachan by infusing the honey with cardamom and adding a splash of rose water. The pair visit a community cafe where Tony’s mother Kulvinder volunteers, and she shares her recipe for haggis pakoras.

Series 1 – 4. West Sussex   Monday, 9 September at 20:30 pm

This episode shows Tony and Cyrus in West Suffolk, where they convey the benefits of  rapeseed oil and cook cinnamon, ginger and red chilli chicken wings. At Melford Hall stately home, they spice up afternoon tea. They add a salt and chilli blend to the cucumbers for the sandwiches and a fennel and orange butter cream to fill the Victoria sponge.

Series 1 – 5. Somerset   Monday, 16 September at 20:30 pm Last in the series.

Somerset and cider, the lads are about boiling a gammon joint in cider that is infused with cinnamon sticks, red chilli and coriander seeds.

Cyrus cooks a chilli cheese toast extravaganza with beer, egg yolks and for that spicy magic, fresh green chillies and lashings of English mustard.

Rick Stein’s India is the new excellent text on curries, written as only Rick can.

Rick Stein sums up all that is special and sumptuous about curries and the Indian recipes he has encountered on his Indian curry Odyssey in this new and beautifully produced curry guide and cookbook. A journey through this exciting and colourful country, it is a sensual and stimulating experience.

We all love a good Curry – some just with onion and chicken, others with creamy sauce and crispy duck…. The variety of possibilities are almost endless  but Rick has – in his unique style – made sense of the complex world that is the Indian Curry.
So what is a good curry? Is it the aroma, the look, or the combination of all these with an expectation of a satisfying meal, that helps us forget about our problems and lifts us to a higher level.

To quote Rick :
‘Whenever I hear the word curry, I’m filled with a longing for spicy hot food with the fragrance of cumin, cloves and cinnamon. I see deep red colours from lots of Kashmiri chilli’s, tinged with a suggestion of yellow from turmeric. I think of the tandoor oven and slightly scorched naan shining with ghee and garlic. In this adventure Rick discovers 120 recipes by visiting home cooks, street vendors and having had what must have been the experience of a lifetime.

Readers of this book if based in the UK or Ireland will have a concept of curry based on visits to various take away food houses. Perhaps Indian, Thai or Chinese. The first thing Rick helps us with is to see curry from the perspective of the Indian people.

It is not the same as we understand it, a curry is something that can refer to almost any food from the Indian subcontinent.
