New Series Jamie’s Comfort Food
A new exciting TV series and cookbook on spices, from chefs Tony Singh and Cyrus Todiwala with a cook book to support the series The Incredible Spice Men
are going to spice up your life. These fine chefs have appeared on programmes such as the Great British Menu and Saturday Kitchen, preparing excellent recipes based on spicing up British food.
There is a friendly banter to carry the program along.

The new book The Incredible Spice Men
has excellent recipes, but there are sections on different spices:
- cumin
- nutmeg
- cinnamon
- chilli
- cassia bark
- cloves
- pepper
- coriander
- star anise
- cardamom
Recipes include, starters, snacks, fish, chicken, poultry, pork, lamb, beef, vegetables, salads, chutneys, desserts and drinks.

1/5 Ginger and Lime Juice.
In the first episode ‘a dover sole with lime and ginger is cooked – then a traditional fish and chips with a spicy marinade for cod fillets. Slow-cooking pulled pork with cinnamon and cloves, and cinnamon and chilli powderwith vanilla ice cream.’

2/5 Tony and Cyrus cook with goats’ cheese in Carmarthenshire and visit a Bridgend sweet shop.
In the second episode ‘beginning in the Cothi Valley in Carmarthenshire, Tony bakes a goat’s cheese, red onion and caraway seed tart served with pickled onions flavoured with chilli flakes, lime juice and pomegranate molasses. A family-run toffee business in Bridgend is visited where they put some whole aniseeds into a pan of bonfire toffee.’

Series 1 – 3. Edinburgh Monday, 2 September at 20:30 pm
3/5 Tonight the intrepid pair visit Tony’s home of Edinburgh and he makes the traditional Scottish dessert cranachan, but with a twist.
The third episode sees Tony Singh taking Cyrus Todiwala to his home town of Edinburgh, where we see him working the spice men magic with traditional Scottish dessert cranachan by infusing the honey with cardamom and adding a splash of rose water. The pair visit a community cafe where Tony’s mother Kulvinder volunteers, and she shares her recipe for haggis pakoras.

Series 1 – 4. West Sussex Monday, 9 September at 20:30 pm
This episode shows Tony and Cyrus in West Suffolk, where they convey the benefits of rapeseed oil and cook cinnamon, ginger and red chilli chicken wings. At Melford Hall stately home, they spice up afternoon tea. They add a salt and chilli blend to the cucumbers for the sandwiches and a fennel and orange butter cream to fill the Victoria sponge.

Series 1 – 5. Somerset Monday, 16 September at 20:30 pm Last in the series.
Somerset and cider, the lads are about boiling a gammon joint in cider that is infused with cinnamon sticks, red chilli and coriander seeds.
Cyrus cooks a chilli cheese toast extravaganza with beer, egg yolks and for that spicy magic, fresh green chillies and lashings of English mustard.
