Life in the Old Bird Yet? Yes it is the turn of the Christmas Turkey to receive Nigella’s loving attention.

Pancetta and chestnut sprouts? and gingerbread stuffing.

Enjoy!

Nigella cruises through Christmas preparation with no panic. She enthuses about the plan of action that ensures Christmas goes without a hitch.

Her countdown starts on Christmas eve, no dry turkey here. Water in a bucket, clove, carroway and mustard seeds, all spice berries, cinnamon. Add salt and sugar, maple syrup, onions – weird huh? Ginger and oranges? Parsley? Has Nigella lost the plot -fragrant bath water? In goes the turkey!

Christmas Day prepare the all spiced gravy. Also the perfect roast potatoes, roast parsnips and brussell sprouts.

Breadsauce to complete the picture. Rum butter, red cranberry sauce?

Release the turkey from its bath and leave to return to room temperature.

Well Nigella is always fun to watch and this year she has a new series on BBC2 (UK) at 8.00 pm, just before Oz and James’s big wine adventure. Surprisingly no new book yet – you can find some of the recipes in the book: Feast – Food that Celebrates Life, UK (£10.79) in the Nigella Book Store and in the USA ($23.10) for Nigella’s Feast.

Nigella’s program Wednesday 6th December:- Spicey!!

Starting the program off in a Christmas market in Salzburg, with a glass of mulled wine/cider sets the theme for the program – the aroma, the spices. Nigella’s unabashed love of Christmas comes shining through. Festive aromas – indeed – sounds so sexy! Woops! Sultry is her middle name.

A great way of cooking spiced glazed ham (recipe) and how the smell of mulled wine evokes Christmas warmth – how to enjoy cooking at home for Christmas. The idea of using spices to permeate  the home and create the atmosphere, literally.

Nigella reviews some old cookery books, that relate to Christmas and have seemingly endless complicated recipes.

Back to the ham and an unusual addition of wine, fennel and onion, garlic and fennel seeds. Star anise completes the recipe. Another great idea is the apple and dry cranberry chutney! What a most amazing recipe – absolutely fabulous! To glaze the ham slash the fat and add cloves, the old fashioned way.

The program is beautifully presented, with alpine snow and diffused light scenes in the kitchen – totally dreamy!

Gingerbread decorations – I haven’t heard of those before. What about a fruitcake, I don’t mean to be rude! Prunes and all sort of fruit. The zest and juice of oranges. You won’t believe the chocolate in the fruitcake (recipe)!  

To end it all smoked salmon, how to cure your own salmon – better than smoked salmon? Two to three days in the fridge and all the flavours get absorbed. Gravlax recipe.

Very enjoyable, I am not sure about Christmas being so fabulous, but the recipes are amazing – you will drool at the sight of the food and you can almost smell the aromas. Well done Nigella!

An excellent hour of food and wine, Nigella then Oz and James – almost too much to bear.
