To night Ken Hom and Ching He Huang Exploring China a Culinary Adventure 8.00pm BBC2 in the final episode of the show when they visit their family connections.
They start off in Guangzhou, birthplace of Cantonese cuisine, sample Dim Sum.
Ken goes to Hong Kong and cooks for relatives he hasn’t seen for 23 years. Ching goes across the Taiwan strait toTaiwan and ending with a final meal in Hong Kong.

Program Four review:

China is home to one in five of the world’s population… wow!! So on this final program Ching and Ken go to Guangzhou, Hong Kong and Taiwan….

Amazing quality of video in HD – such wonderful colours… captures the beauty of China so well.

Ken goes back to his parents home.. Guangdong and family not seen for 23 years. His parents left China for the US and left Guangdong, the home of South China’s largest sea food market. The variety of fish and other sea creatures available is stunning – they are alive and fresh. Not for the faint of heart let me add. Hard to watch.

Cooking scallops is demonstrated by Ken. Ching cooks a stir fry and it is unusual for a woman to be seen in the kitchens cooking.

A famous Cantonese food is Dim Sum so off to a restaurant to sample the authentic Dim Sum. Lotus leaves stuffed with sticky rice… drinking tea goes with Dim Sum and is a tradition.

Ken cooks sweet and sour pork and goes to a market to buy fresh food. Mangosteens and pork. Off to cook for Mrs Lau and many neighbours. The peace and availability of food is discussed and how the level of happiness has improved over the years. The feeling is that they haven’t ever had it so good.

Ching takes advice on an energy boosting tonic from a gynaecologist. In an interesting mix of old and new treatments. Gogi berries, angelica. A chicken broth is made.

Ken shows Ching Cantonese opera.. some performances are shown at restaurants.

Then Ching heads home to Taiwan 112 miles off the coast of China. Her parents left Taiwan and settled in London. Baihe village is home for her grandfather. Emotional to meet him again after her grandmother passed. Ching will cook for the family.

Ken’s relatives set up a restaurant and he goes to meet with them. They go to see the family ancestral village and where they worked in the rice paddy fields. Life was very hard then and the Chinese people are grateful for the benefits they experience today.

A clean up of the graves of his family, some interesting traditions. Then a family meal.

Very touching – particularly how Ken’s mother and father met, the loss of his father at a very young age…..

Yet the optimism they all share….

Then HONG KONG…. for a final dinner Ching and Ken together, looking at the harbour.. at night – wonderful. Reflections on their trip – how China has developed – new freedoms.

We learned how in cooking for someone – you give of yourself. We can learn alot about life, food, sharing, culture, family and cooking.

Cooking can heal us, bring us together and allows us to share…

To night the cuisine of China’s minorities in the west of China, leaving the Chinese megacities a long way off. Minorities in China there are some 55, make up 10 percent f the population – a considerable number of people. Different cultural and historical influences combine to give a wide diversity of cuisine. Very interesting and entertaining as we visit the  jungles of Yunnan and see the divided Muslim city of Kashgar. This is a part of the world that travellers do not go to.

Program Three review:

Ching and Ken go to the – so called -forgotten villages of Western China. Yunnan bordering on Burma and Vietnam. They meet the chief of a Dai village. See Ken and Huang cook with the Dai workmen in the Dunan province in a clip from the show. The workmen make everything from bamboo and banana leaves. Food is prepared and put into bamboo stalks that are placed on an open fire to cook.

On to cook for the chief and he provides a rice wine that he makes himself. Ching goes fishing in the river. Some very strange creatures are caught. Small crab and centipedes. Fish cooked in banana leaves is not steamed but cooked in water.

The chief cooks chicken soup with ginger and chilli. Ken Hom cooks a stir fry and pineapple rice. Using day old rice and cook in oil – add the chopped pineapple – cooked over a wood fire.

In the morning – pur’erh tea, good for cholesterol lowering.

Collecting pu’erh tea Ching cooks with the leaves from the plant. You can use green tea leave to replace the pu’erh tea.

Ken visits a nearby city Jing Hong – tourist information…. it is a world away from the villages, it looks more like Las Vegas and attracts tourists from around the world. The people of Dai Prefecture that have moved to the city are very adept at using their skills and being entrepreneurial in creating food and products to sell to the tourists.

A long journey takes the pair to Kashgar, bordering Tajikistan and Kyrgyzstan and once on the spice routes. A mix of Muslims and they meet Mohammed who takes them through a local market to try the mixed produce, including naan bread.

A fascinating country with many ethnicities and all their differences. Chinese authorities are promoting change and bringing the whole country into the 21st century, a massive task and this is why Ken and Ching’s journey is absolutely amazing.

Ken Hom Ching He Huang Program One 8.00 BBC2 Exploring China

Tonight start of the new cooking series Exploring China – A Culinary Adventure cook book and tv series – Ken Hom and Ching He Huang Exploring China – BBC2 8.00 pm Sunday 5 August 2012.

An amazing program, if a bit gruesome. I don’t like to see how animals are cut up etc.

Anyway Ken and Ching arrive into Beijing and visit a number of restaurants and back street chefs. A restaurant specialising in Peking duck is visited and we hear about how China had so many chefs leave the trade after a period of persecution. Restaurants were closed down during the cultural revolution as they were to bourgeois and did not fit in with the new Communism. The chef in this restaurant returned and now is considered the best in preparing, cooking amd serving Peking Duck.

Another visit takes us to a dumpling expert Chairman Wang, they do look good and are simple to prepare.

Overall an interesting an original program, some amazing new cities in China and so many changes in such a short space of time.  This program is a gutsy real and insightful view of the new China, that we read about.

Perfect fried rice, that can include a variety of left overs. Hope to use rice cooked the day previously – add eggs.
Gok reminices about the food his family used to cook and fairly moves along to prepare and demistify Chinese culinary.
Fast food to a banquet. Gok’s father a cook, helps Gok with his Cantonese – Char Sui Fried Pork.
Gok prepares stir fried green beans and shrimps.
Then off to the Hakasan restaurant in London and to see how fast a main, Fragrant beef in Black bean sauce can be prepared and sent out to the diner. Gok then show us his version. One minute and 41 seconds.
Next how to select and use a wok.
Spicy stir fried prawns and cashew nuts is the next recipe. Base on the three basic ingredients of flavour, sring onion, garlic and ginger.
