Sorrento, Italy D7K_4310

Gino is remembering just what Italy has in terms of food and cooking and says it is time for us in the UK to get real. Time to see what real Italian cooking is, not our version of what we think or are told it is. We know what Gino means, when he asks us to get really into authentic Italian cooking – when we visit Italy we experience it for ourselves.

What about all the parma ham and other authentic foods we try to bring home with us?

In the cookbook Gino captures the flavours, smells and tastes of his homeland in over 100 deliciously simple recipes. We see Pizza, pasta and antipasti dishes, Gino’s classics with a twist such as Honey & Rosemary Lamb Cutlets and Limoncello Mousse.

Gino was born in Torre del Greco, Naples, in southern Italy, and has inherited his grandfather’s love of cooking. He studied at the Luigi de Medici Catering College.

We all know Gino from TV, most particularly the spicy show with Melanie Sykes in Let’s Do Lunch with Gino and Mel, and as a resident chef on ITV’s This Morning.

In this three part series, Paul Hollywood and Mary Berry work closely together showing how the technical challenges from The Great British Bake Off (series three) should be completed.

In the first episode, Mary and Paul show us every step of the first five technical recipes of the series, tackling treacle tarts, rum babasClassic crème caramelhand-raised chicken and bacon pie and Paul’s infamous eight-strand plaited loaf.

All Paul Hollywood’s recipes on the BBC and all Mary Berry’s recipes.

By going through each step of the first five technical recipes of the series, they show exactly how to avoid the mistakes some of the competing bakers made.

Episode Two: The Great British Bake Off Masterclass: 7.00 pm BBC2 + BBC HD Wednesday 24 October 2012

In the second episode, Paul Hollywood and Mary Berry demonstrate how the next set of  technical challenges from series three should be completed. Tonight we will see the step-by-step instructions on how to make a Queen of Puddings, chocolate teacakes, jam doughnuts, a fraisier cake and fondant fancies, again pointing out the best way to avoid the mistakes made by some of the contestants.

Episode Three: The Great British Bake Off Masterclass: 7.00 pm BBC2 + BBC HD Thursday 25 October 2012

The third episode reveals the signature bakes that Mary Berry and Paul Hollywood with their experience – would have chosen if they had been contestants. Again showing each detail, they prepare their sponge puddings, flat breads, Wellingtons, sweet buns and tarte Tatins.

Well worth watching and perhaps reviewing again, to learn the steps as Mary and Paul provide a guide through every step of their recipes.
