Jamie’s Comfort Food from the irrepressible Jamie Oliver delivers cooking of our nations favourite comfort food recipes. The new book is subtitled scrumptious happy classics and contains 100 ‘ultimate’ recipes – to treat the ones we love. The new book from Jamie is published by Michael Joseph and the Penguin Group.


 

There are a variety of recipe headings in Comfort Food. From – old time favourite Nostalgic recipes, good food for feeling great and pick-me up ideas – right through to those foods that bring enjoyment. This must include family, friends and food.

The new book is large and beautifully produced, with 400 pages approx.

With his experience of cooking, food and combining ingredients, his new recipes are the product of years and years of practise. We all know – practise makes perfect. Jamie manages to pull together his best book for a long time. No more austerity cooking – Jamie has sensed the future in this timely book and the future is a positive, enjoyable and happy one. One that has food and family at its heart.

This new age of cooking food, is not one of 15 minute meals, 30 minute meals but as long as one or two hours plus. Amazing – how times and attitudes change.

The photographs are to the usual standard – though I think the quality of the printing could be improved. I guess it is a compromise between what can be afforded and the cost of the book to us the public.

Good work Jamie, I get the feeling this is a defining book in Jamie Oliver’s career and he is getting on in years- so this is a very mature offering and leaves us with the feeling  – this guy know what he is doing. Not a bad example to follow – if you can!

Jamie is a very able teacher and chef, so you will find it easy to follow the recipes in the book and cook excellent comfort food.

Monday 1 Sept at 8 pm

This week Jamie is tackling the British classics shepherd’s pie, some outdoor treats and desserts such as pavlova and sticky-toffee pudding.

Jamie gives some of the nation’s favourite dishes a twist, reinventing British classics like shepherd’s pie, rustling up outdoor treats and transforming old-school desserts such as pavlova and sticky-toffee pudding.

In the first edition, the chef takes on three comfort foods at his home in Essex, and he’s joined by friend Christian, or `DJ BBQ’, to reveal his ultimate burger – including what cut of meat to use, how to cook it and what to have on the side. Plus, Jamie’s secret sauce recipe.

Program Two: 2/6.  The Ultimate Cheese Toastie and Chicken Tikka Masala 

Monday 8 Sept at 8 pm

Jamie Oliver is joined by his friend, the Italian chef Gennaro Contaldo as he prepares a bolognese ravioli. His old boss Gennaro Contaldo (also known as one half of BBC2’s Two Greedy Italians) also assists with making a chicken tikka masala with a secret ingredient – a smile. A bolognese ravioli and also creates the ultimate cheese toastie are on the menu as well as his take on the nation’s favourite dish – chicken tikka masala – cooked over an open fire.

Program Three: 3/6. Steak and Onion Sandwich and Osso Buco

Monday 15 Sept at 8 pm

Jamie makes sticky toffee pudding with his mum Sally. He rustles up a comfort food with the perfect steak and onion sandwich. And he cooks an Italian classic, osso buco with saffron risotto.

Jamie Oliver puts his stamp on three comfort food classics in this edition. First up is a retro treat – chicken Kiev, before the chef prepares spaghetti vongole with a non-traditional pink twist and a deluxe shepherd’s pie made with slow-roasted lamb shoulder rather than mince.

Monday 29 Sept at 8 pm

Jamie Oliver cooks a hearty fish pie, including a delicate fish curry sauce. He makes gnudi – like gnocchi, but lighter – served with a butter and sage sauce. Also a fish curry using coconut milk and spinach for the sauce.

Tonight Jamie offers ham, egg and chips, a Jamaican jerk rub for the ham and served with caramelized pineapple. Over the past six weeks, popular chef Jamie Oliver has been giving some of the nation’s favourite dishes a twist, reinventing British classics like shepherd’s pie, rustling up outdoor treats and transforming old-school desserts such as pavlova and sticky-toffee pudding. Mary shows how to prepare two varieties of canapés, a salmon and asparagus starter, a main course of guinea fowl, and a chocolate tart for pudding. Mary also reveals a trick for cooking steak ahead of time that guarantees perfect results.

Episode Three: Sunday Lunch

What about the perfect Sunday lunch?

Mary is cooking for three generations of her family and the main course is slow-roasted shoulder of lamb with rosemary and paprika rub, served with potato and fennel gratin, and dishes up plum tarte Tatin with fruit salad for dessert.

Episode Four: For a crowd

Expecting a large number of guests for a special occasion?

This episode shows how to create wonderful dishes for a buffet supper, including beef and mushroom stew with mustard mash, salmon en croute with salad, chocolate and orange panna cotta and a meringue tranche with berries and cream.

Episode Five: Weekday Supper

What is a weekday supper?

Mary is sharing food around the kitchen table with friends or family and prepares a Mediterranean platter of houmous, breadsticks, roasted vegetables and tomato and mozzarella salad, as well as lamb dhansak, cottage pie topped with dauphinoise potatoes, and a pasta dish that takes just 15 minutes. She also shows to make elderflower cordial and a crunchy apple crumble.

Episode Six: Summer Lunch

As we approach summer, time for the outdoor summer lunch.

This feast including salmon fillets with herb sauce, ham with home-made chutney, and fillet of beef with garlic and mustard cream. To accompany the cold meats and fish, Mary prepares two salads – one with fiery red rice, and the other featuring broad bean and little gem – and finishes off by making a summer pudding.

TV Series Mary Berry Cooks

In her own kitchen Mary provides easy to follow and step-by-step instructions for making the perfect afternoon tea. Home Chef with Neven Maguire

Neven Maguire returns with the latest series of Home Chef and enjoys master classes from many highly esteemed Irish based chefs followed by Neven’s cooking a family favourite recipe.

The first program takes Neven to the wonderful Ashford Castle in Cong, Co Mayo and we are introduced to the fine chef, Stefan Matz. Stefan is the German born head chef of Ashford castle and the g Hotel.

Our second programme in the new Home Chef series, sees Neven Maguire head off to the absolutely fantastic, Sheen Falls Lodge in Kenmare, Co Kerry.

Recipes:

The head chef of Sheen Falls, Philip Brazil prepares:

  • a trio of Kerry Lamb, to include a braised shoulder, smoked loin and a roast rack of lamb with a rosemary, thyme and poitin sauce and a Parmesan and rooster potato souffle

Neven returns to his restaurant and in the kitchen, prepares:

  • monkfish with gnocchi, wild mushrooms, sun-dried tomatoes and saffron veloute
  • a pudding of apple tart and custard
